Description

By using boneless skinless chicken breast, you have delicious chicken curry in 30 minutes. A great add to your weekly meal routine. 

INGREDIENTS
  • 4 • boneless skinless chicken breasts. (cut in desired sizes,)
  • 1 cup • baby carrots
  • 1 • onion (sliced)
  • 2 • cloves (minced)
  • 3 • fresh thyme
  • 1 • bonnet pepper with seeds (minced)
  • 2 • fresh rosemary (diced)
  • • ½ tsp salt
  • 1 tablespoon • black pepper
  • 2 • garlic powder
  • 1 teaspoon • creole seasoning
  • 2 teaspoons • sazon seasoning
  • • ¼ tsp ground nutmeg
  • 1 teaspoon • paprika
  • 3 • curry powder. (divided 2and1)
  • • ½ stick of butter
  • 1 • olive oil
  • • ¼ cup water or low-sodium chicken broth
  • • ½ cup coconut milk
Instructions
  1. Wash cut chicken and remove any excess fat if there is any. Season chicken with all dry seasonings, leaving 1 tbsp of curry powder, thyme, and rosemary. Cover and marinate for at least 30 minutes. Heat oil and melt butter, when butter melts, add onions and garlic, minced scotch bonnet pepper, and sauté for 2 minutes, add 1 tbsp remaining curry powder and stir in and combine, add 1 cup baby carrots, stir and combine well, add water or chicken broth, cover and cook for 5 minutes. Add seasoned chicken and, and coconut milk stir and combine, cover, and cook for 20 to 25 minutes, stirring occasionally.
