INGREDIENTS
  • 2 pounds boneless skinless chicken brest (bout 4)
  • 1 cup baby crrpts (regulsr crrots diced is fine)
  • 2 cloves garlic (,inced)
  • 3 sticks fresh thyme
  • 1 scotch bonnet pepper(diced) seeds in or out (any hot pepper is fine, if you choose to)
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper, onion powder, garlic powder, chicken sesoning, creole seasoning,
  • 1/2 stick butter (unsalted)
  • 2 tablespoons olive oil
  • 1/2 cup wter (or low sodium chickn broth)
Instructions
  1. Wash cut chicken and remove any excess fat if there is any. Season chicken with all dry seasonings, leaving 1 tbsp of curry powder, thyme, and rosemary. Cover and marinate for at least 30 minutes. Heat oil and melted butter, when butter melts, add onions and garlic, minced scotch bonnet pepper, and sauté for 2 minutes, add 1 tbsp remaining curry powder and stir in and combine, add 1 cup baby carrots, stir and combine well, add 1/4 cup water or chicken broth, cover and cook for 5 minutes. Add season chicken and ½ of water or chicken broth, stir and combine, cover, and cook for 20 to 25 minutes, stirring occasionally.
