Ingredients
  • 21/2 • boneless skinless chicken thighs
  • 2 teaspoons • spicy jerk marinade (divided)
  • 1 teaspoon • salt
  • 1 teaspoon • black pepper
  • • ½ tsp onion powder, garlic powder, smoked paprika, chicken seasoning
  • • ½ tsp ground all spice
  • • ½ tsp combination organic ground ginger, cinnamon, nutmeg
  • 1 teaspoon • garlic tomato and garlic marinade (I make this by roasting tomatoes and garlic, in the oven then blend)
  • • Skewers I use bamboo) (soak in water)
  • 1/3 cup • sweet chili sauce
  • 2 tablespoons • butter (softened)
  • 1 • fresh squeezed lemon juice.
  • 4 tablespoons • honey
Instructions
  1. . Put your wooden or bamboo skewers in water to soak. In a small bowl combine jerk marinade, with all the dry seasonings, tomato and garlic marinade as well as the softened butter. Trim excess fat from meat and wash with water and white vinegar, rinse, then pat dry. Cut into desired sizes. Seasoned with combination season mixture, leaving 2 tsps. for later. Cover and marinade for at least 1 hour. Preheat Air fryer to 375. Lay parchment paper on air fryer basket, and lay your skewers on, cook on 375 for 40 minutes, turning them at the halfway point. Melt the remaining 1 tbsp butter and combine with remaining 2 tsp of seasoning mixture with honey and mix well. When the chicken is done, use a brush, and brush the chicken on all sides.
