Description

A delicious savory beef recipe done the Jamaican way. pairs well with rice, white, or the famous Jamaican rice and beans, and goes well with baked or mashed sweet potatoes. I have also enjoyed it with baked sweet potatoes. 

INGREDIENTS
  • 3 • 3.5 Rump roast (cut into thick slices)
  • 3 (peeled and cut into desired sizes)
  • 1 • stick fresh rosemary
  • 2 teaspoons • minced garlic
  • 4 • garlic cloves
  • 4 • fresh thyme
  • 2 • vine tomatoes (diced)
  • • ½ red and yellow bell pepper (sliced or diced)
  • 1 teaspoon • garlic powder
  • 1 • ground beef bouillon seasoning
  • 1 teaspoon • onion powder
  • 1 teaspoon • black pepper
  • 1 teaspoon • sweet paprika
  • • Salt to taste
  • • ½ cup red wine
  • 1 • cups beef broth (low odium
  • 3 • anise
  • 8 • spice berries
  • 2 tablespoons • butter
  • 2 tablespoons • olive oil
  • 1 tablespoon • vegetable mushroom sauce
  • 1 • tsp liquid maggi seasoning
  • • ½ cup red wine
  • 1 • Jamaican meat seasoning
  • 3 • leaves
  • 4 tablespoons • Jamaican meat seasoning, (you can combine ketchup with brown sugar)
Instructions
  1. DIRECTIONSWash and clean meat, pat dry. In a bowl combine all the dry seasoning and mix well. Season meat well with dry rub seasoning mix, minced garlic, fresh thyme, fresh rosemary, diced tomatoes, bell peppers, mushroom sauce. Cover and marinate for at least 1 hour. Heat olive oil on medium low heat, add butter, when butter melts add whole cloves, star anise. Brown pieces of meat about 3 minutes on each side, being sure to shake off any of the vegetables the meat was seasoned with, like the onions, tomatoes, bell peppers, thyme and rosemary do this in two batches, when done, use a spatula to remove star anise, whole cloves and whole garlic from skillet. Add meat pieces back in with red wine, beef broth and bay leaves, and liquid maggi cover and cook for 1 hour. Then add the vegetables the meat was seasoned with , pour 1 cup hot water in the bowl to get up all the seasonings and pour onto meat, cover and cook for another 30 minutes, add carrots, meat seasonings and 1 cup hot water, cover and cook slowly for 30 minutes.
