INGREDIENTS
  • 2 cups uncooked orzo pasta
  • 3 1/2 cups water (I love using vegetable broth or chicken broth)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 med red onion (sliced)
  • 2 cloves garlic (minced)
  • 1/2 cup grape tomatoes (sliced in two,)
  • 1/2 teaspoon garlic powder, onion powder, dried thyme
Instructions
  1. Cook orzo using instructions on box. In the meantime, in a skillet, heat olive oil, add onions and garlic and sauté for about 3 minutes, then add tomatoes and sauté for another 3 minutes, stirring to combine. Add cooked Orzo to sauté vegetables, add butter, onion powder, and garlic powder, stir, and mix well to combine.
