This is a delicious mouth-watering cajun-smothered chicken recipe, with a hint of spicy ( which can be eliminated without taking away from the amazing flavor of this chicken recipe.

3lb chicken thigs (bon in ( i removed skin, that is optional))
2cups carrots (peeled and diced in desired sizes)
cup onion (sliced)
4clove garlic (minced)
1/3cup diced tomatoes (2 grape vine tomatoes)
red anf 1 green fresh chili pepper (thinly sliced)
Freshly diced tomatoesred,green and yellow sweet peppers (thinly sliced)
1/8cup oil (vegetable, coconut, avocado, or oil of choice)
3 1/2 all purpose flour

In a small bowl combine all the dry seasonings and mix well together to combine. Wash chicken in vinegar and water, remove excess skin, remove skin if choose to. Pat dry, drizzle with olive oil, season well with all the dry seasoning combinations leaving 1 tbsp for later. Cover and let marinate for at least 1 hour. Heat oil on medium high heat, brown chicken pieces on both sides, about 3 minutes on each. You will need to do this in two batches, set aside, add onions and garlic to same pan, stir and cook for 2 minutes, add sweet peppers, and chili pepper and tomatoes stir and cook for an additional 1 minute, add flour and cook for 3 minutes, add carrots, and layer chicken on top, add 2 cups chicken broth , cover and cook for 30 minutes, please stir after 15 minutes to make sure the bottom is not sticking, add remaining ½ cup chicken broth and 2 tbsp butter cover an cook for 15 minutes.
