Chicken Chow Mein Pasta is a fusion dish combining the flavors of classic Chinese chow mein with the comfort of pasta. INGREDIENTS
  • 2 chicken • breasts fillets (thinly sliced or however you prefer)
  • 1 pack • uncooked spaghetti pasta noodles
  • • ¼ of a small cabbage (thinly cut)
  • 2 small • carrots (cut into small thin strips)
  • 1 small • onion (sliced)
  • 3 garlic • cloves (minced)
  • 1 ginger • 1pinch 9 grated or minced)
  • • ½ tri-colour bell peppers (sliced)
  • 2 ½ • tsp Mirren (divided)
  • 1 ½ • tsp dark soy sauce
  • 2 tbsp • light soy sauce (divided)
  • 1 tbsp • 1 and 1 tsp vegetable oyster sauce
  • 1 tbsp • 1 and 1 tsp hoisin sauce
  • 1 tbsp • 1 and 1 tsp Chaoxiang cooking wine
  • 1 tsp • salt, black pepper, onion powder, garlic powder, smoked paprika, cayenne peppe
  • • ¼ tsp ground cinnamon
  • • Pinch of all the dry seasoning for later.
  • 2 tbsp • butter
Instructions
  1. Wash chicken with water and lemon, trim excess fat. Season with 1 tsp Mirren, ½ tsp dark soy sauce, 1 tbsp light soy sauce, 1 tsp hoisin sauce. 1 tsp Chaoxiang cooking wine, salt black pepper onion powder, garlic powder, smoked paprika and cayenne pepper . Cover and marinade while preparing the vegetables, or for at least 30 minutes. Heat oil on medium high heat, brown chicken pieces about 2 minutes on each sides, will need to do this in two batches. In the meantime cook past for 7 minutes, when finish drain and cover in cold water. Set brown chicken pieces aside, in the same pan add butter when butter melts add onions and cook for 1 minutes, add the garlic and ginger stir well to combine, cook for 2 minutes, add bell peppers and carrots, stir well to combine, cover and cook 3 minutes, add the cabbage and stir well to combine cook for 3 minutes stirring until cabbage welts down Add the chicken, remaining soy sauce , hoisin sauce and soy sauce, mix well to combine taste if you need to add remaining dry seasoning mix, then add cooked pasta and using a spatula mix well to combine, cook together for 3 minutes.
