COCONUT GINGER SHRIMP

Ingredients
  • 1 pound large shrimp (peeled and deveined)
  • 1 1/2 cup Coconut milk
  • 1/2 teaspoon salt
  • 1 teaspoon creole seasonong, onion powder, garlic powder, black pepper, old bay seasoning
  • 1 scotch bonnet pepper (diced)
  • 1 medium onion (sliced)
  • 1/2 teaspoon freshly ground ginger
  • 4 cloves garlic (minced)
  • 1/2 green bell pepper (sliced)
  • 1 tablespoon olive oil
  • 1 lemon (juice)
  • 4 sticks fresh thyme
  • 1 lemon (sliced)
Instructions
  1. Combine all the seasoning in a bowl and mix well to combine. Wash shrimp in salt water, rinse and pat dry with clean paper towel. Season shrimp with half of the seasoning mix. Heat olive oil, add garlic, fresh ginger and onion, sauté for 2 minutes, add bell peppers, thyme and tomatoes, sauté for 3-4 minutes, add remaining dry seasoning mix, stir and combine well. Add coconut milk, stir and mix well, taste if you need more salt. Add shrimp, stir in and mix well, cover and cook 15-20 minutes. Add lemon juice and stir in well Here it is serrvied with white rice, which is so good, but can be served with pasta as well.
