INGREDIENTS
  • 1 buld garlic
  • 1/2 cup grape tomatoes
  • 1 small onion (cut in 4 quarters)
  • 1/3 cup lowfat yogurt
  • 1/3 cup skim milk (any milk of choice is fine)
  • 1 1/2 teaspoon salt, onion powder, garlic powder, black pwppwe, sweet paprika (divided 1 n 1/2)
  • 1/2 teaspoon ground oregano
  • 1 teaspoon cayenne pepper (optional)
  • 2 teaspoons olive oil (divided 1 n 1)
  • 1 tablespoon unsalted butter
  • 1 small bunch of fresh spinach
Instructions
  1. Preheat oven to 350. Wash tomatoes and green onions, cut the top off garlic, Drizzle 1 tbsp olive oil over pumpkin, tomatoes, garlic and green onions, sprinkle 1 tsp salt. Cover with foil and bake for 45-50 minutes. Let it cool a bit, then add to a blender all the ingredients with the skim milk and the yogurt, blend well. In the meant time wash and clean chicken breast, Butterfly Chicken breasts this way they are thinner and cook faster, after butterflying I also cut them in half, so I now have 4 pieces. Season chicken pieces with ½ tsp of all the dry seasonings. Also, in the meant time cook pasta using instructions from box but cook 2 minutes less than allotted time adding ½ tsp salt to water. Heat the remaining 1 tbsp olive oil on medium heat, brown seasoned chicken breasts, about 3 minutes on each side, then set aside. Add the blended roast vegetables to the pan, with yogurt, milk, oregano, cayenne pepper , stir well to combine, add fresh spinach cover an bring to a low boil, add pasta and stir well to combine, add the cooked chicken. Tip can dice or slice chicken in desired pieces or leave as is.
