This is such a simple, yet delicious recipe. You can have a #30-minute meal on your hands here, also great for #weeknightmeals. The recipe can easily be doubled or even tripled. Also, you can add other fresh vegetables, such as carrots, green beans, and cauliflower.
- 1 cup boneless skinless chicken breast (diced or cut in desired sizes ( I used 3 breasts))
- 2 cups fresh brocoli
- 1/2 tri color bell peppers (sliced)
- 1 small or medium onion (sliced)
- 3 cloves garlic (minced)
- 1/2 tablespoon black pepper,
- 1 tablespoon green seasoning
- 1 teaspoon garlic powder , onion powder
- 1/2 teaspoon salt
- 2 teaspoons turmeric powder (divided 1n 1)
- 1 1/2 tablespoon curry powder (divided 1 n1/2)
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/3 cup water
- 2 tablespoons water
- 1/3 cup coconut milk (optionl)
- 2 sticks fresh thyme
- 1 teaspoon cayenne pepper, red pepper flakes (I used fresh minced scotch bonnet pepper)
- 1 teaspoon fresh grated ginger
