It's a simple but delicious shrimp recipe. They are packed with flavour .
INGREDIENTS
1lb • large shrimp (peeled and deveined)
1cup • peeled and diced potatoes.
1cup • diced carrots.
1cup • diced celery sticks.
3corns, • chopped in small pieces
4garlic • clove (minced)
• ½ cup diced onion
1cup • diced assorted bell peppers.
1scotch • bonnet pepper
2vine • ripe tomatoes (diced)
3stick • fresh thyme
1tsp • salt (divided)
1tsp • black pepper (divided)
1tsp • onion powder (divided)
1tsp • garlic powder (divided)
1tsp • smoked paprika (divided)
2tsp • curry powder (divided)
1½ • tsp (turmeric powder
1½ • tsp creole seasoning (divided
1½ • tsp old bay seasoning (divided)
2tbsp • butter (divided)
3tbsp • olive oil (divided)
2tbsp • all-purpose flour
1½ • tsp fresh lemon juice
1/2cup • coconut milk
1/4 • 1 cup water (preferably hot)

DIRECTIONSWash and clean shrimp, making sure they are all deveined, pat dry and remove excess water, season with ½ tsp salt, black pepper, onion powder, garlic powder, smoked paprika creole seasoning, and old bay seasoning, 1 tsp turmeric powder and 1 tsp curry powder Set aside, heat 2 tbsp oil on medium heat add flour and stir constantly till flour is cooked out(because this is not gumbo does not need to get that dark golden colour, should be done in about 3 minutes, then add minced garlic and onion, cook for 2 minutes, add remaining 1 tbsp olive oil stir to combine well, add bell peppers and onions, thyme and scotch bonnet pepper and corn stir to combine well, cook for 8minutes. Add remaining dry seasonings and stir well to combine. Add 1 tbsp butter, carrots, potatoes, and celery, and 1/2 coconut milk, stir well to combine cover and cook for 8 minutes. Add shrimp, remaining 1 tbsp butter, lemon juice, stir to combine, cover and cook for another 8 minutes.
