INGREDIENTS
1 • lb to large shrimp (peeled and deveined)
1 • sweet onion (finely diced)
6 • 6-8 of garlic (minced)
2 • tomatoes (diced)
• Juice of a lemon (divided ½ n ½)
2tablespoons • olive oil
1/1 • 1/1/2 of unsalted butter (I love to use Kerri Gold, Irish butter)
• ½ tsp salt
1teaspoon • black pepper
1teaspoon • creole seasoning
1 • bay seasoning
1teaspoon • garlic powder
1teaspoon • onion powder
1teaspoon • paprika
Instructions
Soak shrimp in a bowl of water with ½ of the lemon juice for about 2 minutes, drain and rinse with fresh water. In a skillet, heat olive oil on medium heat, sauté minced garlic and onion for about 2 minutes, add diced tomatoes, stir and cook about another minute. Add the butter, when butter melts, stir to combine well. Layer the shrimp in the skillet the sprinkle all the seasonings in, Stir, and cover, cooking for 6 minutes, then flip shrimp on the other side and cook for another 6 minutes. Squeeze remaining lemon juice over the cooked shrimp.
