INGREDIENTS
  • 4 pounds chicken (1/4 of a 8lb whole chicken)
  • 1/2 teaspoon salt, black pepper, onion powder, garlic powder,smoked paprika, marjoram , dry thyme, dried oregano
  • 1 tablespoon
  • 2 tablespoons butter
  • 1 tablespoon garlic chicli oil
  • 6 cloves garlic (minced)
  • 1 tablespoon soy sauce (low sodium)
  • 1 tablespoon cooking wine (I use Shaoxing)
  • 6 tablespoons honey
Instructions
  1. Wash chicken in water and lemon juice, drain and rinse in clean water, remove any feathers if any. Pat dry chicken inside and outside. drizzle olive oil on both sides. In a small bowl combine all the dry seasonings and using a fork, mix well to combine. Season both the inside and the outside of the chicken well, cover and marinade for at least 30 minutes. Preheat oven to 350 degrees, Bake uncovered for 1 hour. Remove from oven and use the juices from the chicken to base well, Put back in the oven on top shelf for 15 minutes. In the meantime, melt butter in sauce pan, then add garlic and sauté for 2 minutes, add garlic chili oil (I use homemade, it is on my YouTube channel how I make it), stir well to combine and cook for 1 minute, add soy sauce, honey and cooking wine and stir well to combine, cook for 5 minutes on low, stirring constantly. Remove chicken from oven and base both sides well with sauce. Turn oven to 375 and put the chicken back in on top shelf and bake for another 20 minutes. TIP: The recipe can easily be doubled. I cut the whole chicken in half because sadly and happily I am only cooking for me and hubby as we are now empty nesters.
