INGREDIENTS
  • 2 pounds beef stew meat
  • 1 teaspoon salt, black pepper, onion powder, garlic powder, smoked paprika, dry thyme
  • 2 tablespoons soy sauce (low sodium)
  • 2 cups diceed potatoes
  • 1 cup carrots (diced)
  • 1 cup assorted bell peppers (chopped largely)
  • 1/2 cup chopped celery (about 2 stalks)
  • 3 bay ,eaves
  • 1 can diced or crushed tomatoes
  • 1 tablespoon green seasoning
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons butter
  • 1 1/2 tablespoon all purpose flour
  • 1/2 cup beef broth (low sodium)
Instructions
  1. Wash meat and drain, pat dry with clean paper towel, drizzle 1 tbsp olive oil, season with salt, black pepper, onion powder, garlic powder, paprika and dry thyme. Cover and let marinate for at least 1 hour. Heat Insta-pot on manual settings, add olive oil, then add garlic paste, onions and sauté for 3 minutes, add butter and seasoned meat, stir to combine, and sauté for 3 minutes, then add green seasoning and stir to combine well, add bell peppers, tomatoes and stir to combine well, add flour and stir for 3 minutes. Add bay leaves, soy sauce and tomato sauce, and beef broth, stir and combine well. Take settings off manual, cover and put on meat/stew for 35 minutes. After 35 minutes, stir in carrots, potatoes, celery, and tomato paste, stir, and combine well, cover and cook on meat stew for 15 minutes.
