A different spin on the popular cole slaw recipe, a little more on the healthier side.
INGREDIENTS
1 • bag of coleslaw mix (about 12 oz)
• ½ cup of fresh diced pineapple
• A small pinch of freshly grated ginger
1/3cup • pineapple juice
• ¼ cup mayo
3 • honey mustard (can use regular mustard with 1tsp sugar to sweeten)
• ½ of a scotch bonnet pepper (minced)
1 • black pepper
• ¼ tsp salt
• ½ of assorted bell peppers (thinly sliced)
Instructions
In a small bowl combine pineapple juice, ginger, mayo mustard, scotch bonnet pepper, honey, black pepper and salt and whisk well to combine. In a large bowl pour bag od Cole slaw, then pour liquid mixture over it and using two large spoons toss and combine well
Chill for at least 5 minutes in refrigerator before serving.
