With this dish, I add other spices, and swap some spices for my blend of spices.

Stew Chicken is a flavorful, comforting dish that brings together tender chicken thighs and legs with a rich blend of spices and vegetables. This recipe allows for creative variations by incorporating different spices to enhance the classic stew. The chicken is marinated in a mix of spices, including paprika, annatto seeds, and scotch bonnet pepper, then browned and slowly simmered with bell peppers, onions, tomatoes, and fresh herbs. The result is a deeply savory and satisfying stew, perfect for a hearty meal.

Ingredients
  • 3 • chicken (I use thigs and legs, bone in)
  • • ½ red and yellow bell peppers (sliced)
  • 1 • onion (sliced)
  • 4 • garlic (minced)
  • 2 • onions cut in large pieces
  • 2 • fresh thyme
  • • Pinch of fresh ginger (diced)
  • 2 • tomatoes (diced)
  • • ½ tsp sweet paprika
  • • ½ tsp ground annatto seeds
  • • ¼ tsp ground coriander
  • • ¼ tsp ground fennel seeds
  • 1 teaspoon • ground black pepper
  • • ¼ tsp ground all spice
  • 1 teaspoon • onion powder
  • 1 teaspoon • garlic powder
  • 1 teaspoon • salt
  • 1 teaspoon • ground scotch bonnet pepper
  • • ½ tsp ground dried rosemary
  • 1 tablespoon • dark soy sauce
  • 2 tablespoons • brown sugar
  • 2 tablespoons • avocado oil (or any oil for heat)
  • 3 • size carrots, (peeled and cut into desired sizes)
  • 3 • fresh thyme
  • 2 • leaves
  • 8 • spice berries
  • 4 tablespoons • ketchup
Instructions
  1. This recipe used chicken legs and thighs. Wash chicken with water and vinegar, remove excess fat and skin. I removed all the skin from both the legs and the thighs. Rinse with clean water. In a small bowl add all the dry seasonings and mix well to combine. Pour half of the seasoning mixture onto clean chicken and using your hands rub well into chicken, add half of the bell peppers, onions and tomatoes and fresh thyme to the seasoned chicken, then add the remaining seasoning blend and soy sauce and again using your hands season well. Cover and marinade at least1 hour, more if you can. Heat oil on medium high heat, add brown sugar and stir continuously until sugar dissolves and caramelized. Shake off the vegetables from seasoned chicken and add to pan, brown about 3 minutes on each side, then add the minced garlic and minced ginger as well as the bell peppers, onions and tomatoes that were seasoned with the chicken, cover and let cook in its own juices for about 30 minutes, stirring constantly. Then add remaining onions, tomatoes, and bell peppers, as well as the carrots. Add 1 cup hot water to the bowl the chicken was seasoned in, and swoosh it around add to chicken and vegetables, add ketchup, stir to combine, Cover and cook another 30 minutes.
