Although this recipe uses the whole snapper, which Jamaicans love and prefer. If you are concerned about the bones, you can also use snapper filets for this recipe. So many times I have had to do that for my non-Jamaican husband.
- 2 pounds snapper (3 whole snapper)
- 1/2 teaspoon salt
- 1 1/2 teaspoon old bay seasonong, creole seasoning, black pepper, garlic powder, onion powder, smoked paprika , lemon pepper, ground all spice , dried thyme , ground coriander
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cinammon, ground ginger (can also use fresh ginger)
- 2 tablespoons brown sugar (can use honet as welll)
- 1/3 cup ketchup
- 3 tablespoons Worcestershire (or low sodium soy sauce)
- 1 scotch bonnett pepper (diced)
- 2 cloves garlic (minced)
- 2 roma tomatoes (diced)
- 1/2 tric color bell pepper (sliced)
- 1 large onion (sliced)
- 2 tablespoons butter
- 1 cup oil for frying (oil of choice)
- 1 cup water
