INGREDIENTS
  • 1 lb. • chicken gizzards
  • • ½ tsp salt, onion powder, garlic powder, smoked paprika, tropical sazon, chicken seasoning, ground scotch bonnet pepper, dry thyme
  • • ¼ tsp ground ginger
  • 1 tsp • 1 black pepper1 tsp browning
  • 1 tbsp • brown sugar.
  • 4 tbsp • ketchup
  • • Juice of ½ lemon
  • • ½ assorted bell peppers (sliced)
  • 1 medium • size onion (sliced
  • 3 cloves • 3 garlic 9minced)
  • 3 sprigs • fresh thyme
  • 4 cups • water (hot)
  • 2 carrots(peeled and cut in desired sizes)
  • 2 tbsp • olive oil
Instructions
  1. Wash gizzards in water, with vinegar and lime juice, making sure they are all clean, rinse and drain properly. Season with all the dry seasoning mix, cover and marinade for at least 1 hour. Heat olive oil on medium heat, add seasoned gizzards, brown sugar, stir and combine, cover and cook for 20 minutes, stirring constantly, you will not need to add any liquid for those 20 minutes. After 20 minutes, add lemon juice, stir to combine, add 2 cups of hot water, cover and cook for 40 minutes. Then add garlic, onions, bell peppers, fresh thyme, carrots, ketchup and another 2 cups hot water, cook for 30 minutes.
