Description

Baked chicken done right, the blend of seasonings fills this baked chicken recipe with aromas that make you just want to dig in and the flavors leave you wanting more. 

Ingredients
  • 4 quarters (about 3lbs)
  • 3 tablespoons white vinegar (for cleaning the chicken)
  • 2 tablespoons extra virgin olive oil (or any oil you prefer)
  • 3 homemade green seasoning
  • 1 tbsp. allspice
  • ½ tsp salt (sea salt)
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon sazon seasoning
  • ½ tsp cinnamon powder
  • ¼ tsp nutmeg
Instructions
  1. Wash chicken in vinegar and cold water, remove excess skin, fats, and any impurities you can see. Make about 3 o 4 slices in on the skin side of the chicken (this not only helps with the cooking it is also good for the seasoning to penetrate the chicken) In a bowl combine the green seasoning, with all the other dry seasoning mix and combine well together. Season each side of each piece of chicken well, making sure to stuff some in those slices you made. Cover and marinate for at least 1 to 2 hours. Preheat oven to 400. Layer baking pan with olive oil and spread. Place chicken in pan skin side up, bake on the lower rack for 1 hour and 10 minutes, (uncovered)
  2. Note: If your green seasoning is not spicey and you want a little heat, you can chop a scotch bonnet or any other hot pepper finely and add to your seasoning mixture.
