Description

I grew up on porridge in Jamaica either oatmeal, cornmeal, or farina (cream of wheat) and on those chilly mornings, rainy mornings, and sometimes evenings I still crave and would make either. My young adult children still love either as well, because I may no longer be in Jamaica but I raised them on it. I like to enjoy mine with crackers. 

INGREDIENTS
  • 21/2 cups • coconut milk (not the milk in the can)
  • 1 cup • uncooked cream of wheat
  • • pinch of ground ginger,
  • • pinch of cinnamon,
  • • pinch ground nutmeg
  • 1/2 teaspoon • vanilla extract
  • 1/4 teaspoon • almond extract.
  • • Condensed milk to sweetened
Instructions
  1. Bring liquid to a boil, add cream of wheat slowly while whisking, whisk continuously for 3 minutes, add ginger, cinnamon, nutmeg, vanilla extract, and almond extract while continuing to whisk for an additional 5 minutes. Turn the heat off and sweeten with condensed milk.
