Jamaican Style Cream of Wheat ( Porridge)

I grew up in Jamaica so porridge was a big part of my life, starting from baby until I left at age 15, yet as an adult I not only make it for my children but it is one of those childhood things/food I still quite enjoy as an adult. I love it for breakfast on those cool( since I live in Florida) mornings, and rainy mornings, Oe I will enjoy it as an evening snack, on rainy evenings or cool evenings as well. growing up we would enjoy our bowl of porridge with our famous Jamaican hard dough bread, I now like to enjoy it with Ritz crackers, I actually break them up in as a child just as I did as a child with the hard dough bread.

  • 2 cups coconut milk (n=preferably not the one in the can.)
  • 1/2 cup water
  • 1 cup uncooked cream of wheat
  • 1 pinch ground ginger, cinnamon powder, nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup sweet condensed milk (for sweetening so more or less is fine.)
Instructions
    Bring liquid to a boil, add cream of wheat slowly while whisking, whisk continuously for 3 minutes, add ginger, cinnamon, nutmeg, vanilla extract, and almond extract while continuing to whisk for an additional 5 minutes. Turn heats off and sweeten with condensed milk.
