- 2 pounds salmon (cut into desired size(skin on or off))
- 1/2 tri- colour bell peppers (cut into slices)
- 1 small onion (sliced)
- 2 teaspoons minced garlic
- 3/4 cups diced roma tomatoes
- 1 teaspoon diced scotch bonnet pepper (1 whole ( diced, seeds in or out))
- 3 sticks fresh thyme
- 2 sticks green onions
- 1 1/2 teaspoon fish sauce
- 1 tablespoon mirren (optional)
- 1 teaspoon black pepper, onion powder, garlic powder, old bay seasoning
- 1 pinch salt (or salt to taste)
- 1/3 cup ketchup
- 1 tablespoon dark soy sauce
- 2 tablespoons olive oil (divided 1n1)
- 4 tablespoons oil for cooking (vegetable, canola, or coconut, or any oil of choice)
