You cannot go wrong with the sweet, Spicy, and savory chicken breast recipe. You have the option to make it mild instead of spicy. 

INGREDIENTS
  • Ingredients for Chicken
  • 4 • size chicken breasts
  • 2 tablespoons • jerk marinade (spicy or mild)
  • 1 teaspoon • salt
  • 1 teaspoon • black pepper
  • 1 teaspoon • garlic powder
  • 1/4 teaspoon • cinnamon powder
  • • ¼ tsp nutmeg
  • 1 teaspoon • ground all spice
  • 1 tablespoon • soy sauce
  • 1 tablespoon • canola or coconut oil
  • 2 tablespoons • white vinegar for cleaning chicken
  • Saute Pineapple and Sauce
  • Ingredients
  • 4 • 4-6 of pineapples (you can use the one from the can or fresh slice)
  • 1 teaspoon • oil of choice (I use coconut)
  • • ¼ stick of unsalted butter
  • 1 • cup pineapple juice
  • 1/2 cup • soy sauce (low sodium)
  • • ½ cup water
  • 1/3 cup • pineapple chunks (optional)
  • • ¼ cup brown sugar
  • 1 teaspoon • fresh grated ginger
  • 1 teaspoon • jerk marinade
  • • Pinch of salt and black pepper.
  • 2 tablespoons • 2 cornstarch/3 tbsp water for thickening.
Instructions
  1. Heat 1 tsp oil and ¼ stick of butter on medium high heat. sauté pineapple slices till you have a golden-brown color on each side, about 2 to 3 minutes on each side. Set aside on a plate. Then pour remaining oil and butter mixture from sauteing pineapples in a sauce pan, turn on medium low heat, add grated ginger, and jerk marinade, stir and sauté about 1 minute, add brown sugar, pineapple juice, water, pineapple chunks, soy sauce and cover and bring to a boil. When boil, mix water and corn starch together, add in the pot, stirring constantly. Add a pinch of salt and black pepper.
