INGREDIENTS
  • 1 • lbs. boneless skinless chicken thighs (you can cut chicken in desired sizes, or leave whole as I did)
  • 1 teaspoon • spicy jerk marinade
  • • ½ tsp onion powder, garlic powder, smoked paprika, black pepper, sazon tropical seasoning, dry jerk rub
  • 1 cup • 1 and 1 tbsp pineapple juice (from the can of pineapple chunks)
  • 1 cup • pineapple chunks
  • • ½ red bell pepper (cut in chunks)
  • 3 • garlic (minced)
  • 1 • onion (largely diced)
  • 1 cup • chopped broccoli
  • 2 tablespoons • low sodium soy sauce (divided)
  • 1 • tsp Shaoxing cooking wine
  • 1 tablespoon • brown sugar
  • 4 tablespoons • honey
  • 2 tablespoons • ketchup
  • 21/2 tablespoons • 21/2 cornstarch slurry (mix ¾ tsp cornstarch with 2 tbsp water
  • 3 tablespoons • avocado oil
  • 1 tablespoon • white vinegar (to clean chicken)
Instructions
  1. In a small bowl, combine all the dry ingredients with jerk marinade, 1 tbsp pineapple juice, 1 tbsp soy sauce and 1 tsp Shaoxing cooking wine. Mix well to combine. Trim excess fat from chicken (I use kitchen scissors to do this) Wash chicken with water and vinegar, rinse and drain completely, season with combination seasoning mix, leaving about ½ tsp for later cover and marinade at least 1 hour.
  2. Heat 2 tbsp avocado oil on medium high heat, brown chicken pieces in batches, about 3 minutes on each side. Set aside, (At this point I switch the skillet for a clean one, this is optional, you can continue with the same skillet). Add remaining 1 tbsp avocado oil, and saute onion and garlic for 2 minutes, add bell peppers and sauté for another 2 minutes, add another pinch of salt to taste, add remaining ½ tsp seasoning mix, stir well to combine, add pineapple chunks and brown sugar, and stir well to combine. Add pineapple juice , remining 1 tbsp soy sauce, ketchup, and honey, mix well to combine, bring to a low boil, add chicken pieces on in, cover and cook for 10 minutes. Add broccoli and stir to combine cover and cook for 3 minutes, then add cornstarch slurry, mix well to combine, cover and cook for 5 minutes
  3. Tip: The jerk dry rub I use is homemade, which includes organic ground ginger, ground nutmeg and ground cinnamon( that is just some of the seasonings included, which is why I did not add ginger to the recipe)
