Wash chicken with water and vinegar, remove skin(optional) and trim excess fat. Also optional depending on size of chicken thighs, cut them in halves. Drizzle 1 tbsp oil onto chicken, season with 1 tsp onion powder, garlic powder, creole seasoning, Cajun seasoning, 1 tsp smoked paprika, black pepper and dried spice blend. Season chicken well, cover and marinade at least 30 minutes. Prehaet oven to 350. Heat remaining oil on medium high heat, brown chicken pieces (about 3 minutes on each side, ( remove and set aside), brown sausages in same pan, about 1 minute on each side, leaving the sausage in the pan, add the onions and garlic, stir to combine and cook for 2 minutes stirring continuously, add the bell peppers , carrots, and stir well to combine, add the can of red beans, the remaining ½ tsp of onion powder, garlic powder, Cajun and creole seasoning, stir well to combine, cover and cook for 5 minutes, taste if salt is needed then add, add hot sauce and stir well to combine, add the wash rice, and stir well to combine, add water. Add the chicken pieces on top, cover and cook in the microwave for 35 minutes.
