INGREDIENTS
  • 1 boneless skinles chicken breast (cut in bite size pieces)
  • 2 cups uncooked orzo pasta
  • 2 cups hot water (or low sodium chicken broth)
  • 1/2 cup frozen mixed vegetables (thawed)
  • 1 tablespoon olive oil
  • 1 teaspoon salt,
  • 1 1/2 teaspoon onion powder, garlic powder, chicken seasoning
  • 2 tablespoons butter
  • 1 small onion (diced)
  • 1/2 cup yellow and green bell pepper (diced)
  • 3 cloves garlic (minced)
  • 1/2 cup grape tomatoes (cut in half)
  • 2 sticks fresh thyme
  • 1 stick fresh rosemary
Instructions
  1. Wash and clean chicken with water and lemon juice. Diced in desired bite sized pieces. Season with salt, 1 tsp black pepper, onion powder, garlic powder, chicken seasoning. Set aside to marinade for at least 30 minutes and prepare your vegetables. Heat olive oil on medium high heat, add chicken pieces and brown on each side for about 2-3 minutes on each side. Do not remove chicken pieces. Add minced garlic and diced onions, sauté 2 minutes, add tomatoes, bell pepper, thyme and rosemary, stir for 2 minutes and combine, add mixed vegetables, butter, ½ tsp onion powder, garlic powder and chicken seasoning. Stir and combine well. Add water or chicken broth, cover and bring to a low boil. Add orzo, stir and combine well, cover and cook until pasta is tender.
