Orange Honey Jerk Chicken is a bold and flavorful dish that combines the spicy heat of jerk seasoning with the sweetness of honey and the bright citrusy notes of orange. A whole organic chicken is spatchcocked and marinated with a blend of jerk marinade, garlic, and tomato marinade, and a mix of warm spices like cinnamon, ginger, and smoked paprika. After marinating, the chicken is baked to perfection, basted with a tangy orange-honey sauce, and finished with a glaze that gives the dish a perfect balance of sweet, spicy, and savory flavors. Ideal for an impressive family meal or special occasion.

INGREDIENTS
  • 1 (6lbs. whole organic chicken)
  • 2 tablespoons • melted butter (unsalted)
  • 2 tablespoons • jerk marinade (spicy)
  • 1 tablespoon • roasted tomato and garlic marinade
  • 1 teaspoon • black pepper, salt, smoked paprika, ground all-spice, onion powder, garlic powder,
  • • ½ tsp ground coriander, ground fennel seeds, ground annatto seeds, lemon pepper seasoning
  • • ¼ tsp cinnamon powder, ground ginger, ground nutmeg (organic)
  • 1 tablespoon • orange zest
  • 1/3 cup • honey
  • 1 tablespoon • vinegar (I used balsamic)
  • • ½ cup fresh squeezed orange juice
  • 1/8 cup • 1/8 and 6 tbsp water
  • 1 • tbsp cornstarch slurry
Instructions
  1. Wash chicken with water and vinegar, removing any impurities from the skin, removing the guts on the inside. Remove bone from back of chicken and spatchcock the chicken. Rise with clean water, dry with clean paper towel. In a bowl combine melted butter, jerk marinade, garlic and tomato marinade all the dry ingredients and mix well to combine. Make a cut or into the breast area of the chicken as well as the thighs and legs. Season the back and front of chicken generously., leaving 1 tbsp for later Cover and marinade at least 2 hours, overnight if possible. Preheat oven to 350 degrees. Add 1/8 cup of water to pan with chicken bake chicken uncovered for 1hr and 45 minutes, removing and basting after 1 hour. And again 30 minutes later. In the meantime, make sauce. In saucepan add remining 1 tbsp marinade mixture, with honey, orange juice, balsamic vinegar and 6tbsp water, bring to a low boil stirring constantly, add cornstarch slurry and stir constantly for about 8 minutes.
  2. Tip: You can base finish chicken with sauce or serve over each serving.
