2tablespoons spicy jerk marinade (can also use med or non spicy)
1teaspoon garlic powder, onion powder
1/2teaspoon salt (I used smoked salt)
1tablespoon black pepper, white pepper
1 1/2teaspoon smoked paprika
1/3cup brown sugar
1teaspoon fresh ground ginger (or organic powder)
3/4teaspoons ground cinnamon powder
2tablespoons balsamic vinegar
1/3cup brown sugar
1cup ketchup
1/3cup mustard (yellow or brown)
4tablespoons honey
Instructions
In a bowl combine all the seasonings, with 1 tbsp of balsamic vinegar, the cinnamon powder, and the ginger and the jerk marinade mix and combine well. Wash ribs and remove the membrane from the inside, rub the olive oil on both side of the rib, then season with seasoning mix on both sides, be sure to lather on a generous amount on each side Leaving at least 2 tsps. of the seasoning mix for the barbecue sauce. Cover and marinade at least 1 hour. ( I actually marinade mine overnight) Preheat oven to 350, lay rib on baking sheet, and cook 2 ½ hour uncovered. Please start on the inside and halfway through flip it on the outside. When it is almost done, in a saucepan, add ketchup, honey, mustard, remaining 1 tbsp balsamic vinegar, the cinnamon powder and ginger and the remaining seasoning mix left over from seasoning the rib cook slowly for 10 minutes while stirring constantly. Remove the rib from the oven. Lather both sides with the sauce and put back in the oven for another 15 minutes, remove let sit about 5 minutes, then cut and divide into sections.
Tip, for the last 15 minutes, you can put your oven on broil to get a sauce to thicken up more on the ribs.
