INGREDIENTS
  • 1 1/2 pound salmon (cut in 3 slices, are desired sizes)
  • 1 cup pineapple chunks (canned or fresh)
  • 1 cup pineapple sweet chili sauce (plain sweet chili sauce is fine as well)
  • 2 teaspoons spicy jerk marinade
  • 2 tablespoons olive oil (divided 1n1)
  • 1 tablespoon black pepper
  • 1/2 teaspoon white pepper, oion powder, gar;ic powder, salt, old bay seasoning , lemon pepper , smoked paprika,
  • 2 tablespoons low sodium soy sauce
Instructions
  1. In a small bowl combine jerk marinade, 1 tbsp olive oil, soy sauce and all the dry ingredients and mix well to combine. Wash salmon with water and lemon juice, pat dry. Use other remaining 1 tbsp olive oil to lather baking pan. Lay salmon on baking pan and season both sides of each piece generously. Bake for 35 minutes, remove from oven and lather back side of salmon pieces with pineapple sweet chili, then flip and lather other side, layer the pineapple chunks on top, put back in the oven for 15 minutes.
