Ingredients
  • 1 pound salmon (cut in cubes or bite size pieces)
  • 1/2 pound shrimp (preferably extra large or jumbo)
  • 1 cup cooked pumpkin (mashed)
  • 1 cup diced carrots
  • 1 cup coconut milk
  • 1/2 cup water (water from cooked pasta)
  • 1 1/2 tablespoon jerk marinade (spicy or mild)
  • 11/2 teaspoons salt, black pepper, onion powder, garlic powder, smoked paprika
  • 1/2 teaspoon ground all spice
  • 1 1/2 tablespoon olive oil
  • 1 medium onion (sliced or diced)
  • 1 cup tri-color bell peppers (diced)
  • 1/3 cup smokedgrated gouda cheese
  • 1/3 cup grated parmessan cheese
  • 3 tablespoons lemon juice
  • 2 tablespoons butter
Instructions
  1. Deveined all the shrimp, remove the scale from salmon and cut into bit size pieces, wash both with lemon and water, pat dry in a small bowl combines 1 tsp each of all the dry seasoning mixes and 1 tbsp jerk marinade. Pour ½ tbsp olive oil onto shrimp and salmon making sure both sides are lathered. Season shrimp and salmon on both sides. Preheat oven to 350, bake salmon and shrimp for 10 minutes, set aside. In the meantime, cook pasta using directions on box, when done, run cold water on it to cool, also heat 1 tbsp olive with 2 tbsp butter, once butter melts, sauté garlic and onion for about 2-3 minutes, then add bell peppers and sauté another 1 minute, add carrots, stir and combine, cook about 3 minutes to soften carrots a bit. Add mashed pumpkin, add remaining season mix stir to mix well, remaining jerk marinade, and all spice add coconut milk and water stir to mix well. Add cheeses and stir well to combine Cover and bring to a low boil.. Add cooked past and mix well, when pasta is combine well into sauce mix, add shrimp and salmon and stir well to combine
