    Ingredients
  • 1 pound large or jumbo shrimp (peeled and deveined)
  • 1 bulb of garlic
  • 1 small onion (cut into 4 pieces)
  • 1 cup grape tomatoes
  • 1 teaspoon lemon pepper seasoning
  • 1/2 teaspoon black pepper, onion powder, garlic powder, old bay seasoning
  • 1/4 teaspoon salt
  • 2 tablespoons butter (unsalted)
  • 4 tablespoons low sodium vegetable or seafood broth
  • 1 tablespoon fresh squeezed lemon juice
Instructions
  1. Preheat oven to 350 Wash and pat dry tomatoes, cut the top off garlic bulb, cut onion into 4 chunks. Lay all veggies on a baking pan, sprinkle with 1 tbsp olive oil. Baked uncovered for 35 minutes. In the meantime, in a small bowl combine all the seasonings and mix well wash shrimp , pat dry and season with the dry seasoning mix, leaving about 1tsp and set aside. In a skillet heat the remaining 1 tbsp olive oil, brown shrimp 2 minutes on each side. Set it aside. When veggies are done roasting, remove peel from garlic, add all the roasted vegetables and broth in a blender, blend until smooth. In the same skillet you brown the shrimp in add the butter, after butter melts add the blended vegetables, add the remaining 1 tsp seasoning mix, stir and mix well, cover and cook about 3 minutes, add the shrimp in, stir cover and cook on low for 8-10 minutes. Tip You can cut the cooking time down tremendously if you add this recipe to your meal plan and prep the roasted vegetables ahead of time, or if you are like me, I sometimes make a large batch and keep in my freezer up to a month because they all go so well with so many different dishes.
