INGREDIENTS

1 • (5lbs.)
1 tbsp • crush scotch bonnet peper (cayenne or any other is fine)
2 tsps. • Combination dried seasoning blend (dried thyme, parsley, marjoram,)
1 • tsp salt
1 tsp • ground coriander
1 tsp • ground all spice
2 tsp • black pepper, onion powder garlic powder, chicken seasoning, unsalted creole seasoning
1 tbsp • smoked paprika (I used roasted and ground annatto seeds)
2 tsp • ground hibiscus
1 tsp • lemon pepper seasoning
2 tbsp • avocado oil (olive oil is good)
6 cloves • of garlic (minced)
2 tbsp • green seasoning
1/8 cup • 1/8 white vinegar or juice of 2 lemons (for cleaning the chicken)

Instructions

Directions remove excess fat from chicken and any impurities, was with water and vinegar, or lemon juice. Rinse with clean water, pat dry. In a bowl combine oil with all the seasoning and minced garlic. Mix well to combine, season chicken making sure all pieces are coated and under skin . Cover and marinade at least 1 hour, overnight if possible. Preheat oven to 350degrees. Lay chicken on baking pan, and if any season mixture remaining in bowl pour oven the chicken. Bake for 1 hour and 15 minutes, flipping the chicken pieces at the half way mark.
