Description

A flavorful salmon dish with a delightful balance of sweet, spicy, and tangy notes. Perfectly seared salmon filets are seasoned with a medley of spices, then topped with a vibrant honey ginger sauce made with bell peppers, pineapple, and soy sauce. A touch of brown sugar and red pepper flakes enhances the sweet and spicy combination, while fresh lemon juice adds brightness. This dish pairs beautifully with steamed rice or sautéed vegetables for a quick and impressive meal.

INGREDIENTS
  • 1 ½ • lbs salmon (cut into two large filets)
  • 1 tsp • salt, black pepper,
  • • ½ tsp onion powder, garlic powder, smoked paprika, old bay seasoning, non salt creole seasoning, cayenne pepper
  • 3 tbsp • coconut oil (olive oil or avocado oil is fine)
  • 1 tbsp • olive oil (for seasoning the salmon)
  • 1 cup • diced mixed bell peppers (I use red and green)
  • 1 1 1 • 1 /2 tsp minced garlic
  • • ¾ cup dice pineapple (use fresh, but canned is fine)
  • 2 tbsp • brown sugar
  • 3 tbsp • honey
  • 1 pinch • fresh ginger (minced or finely sliced)
  • 2 tsp • 2 cornstarch and 2 tbsp water (make slurry)
  • 1 tbsp • Chaoxiang cooking wine (or vinegar of choice)
  • 4 tbsp • low sodium soy sauce
  • 2 tbsp • butter
  • • Juice of ½ lemon
  • 3 tbsp • water
  • 1 tsp • red pepper flakes
Instructions
  1. Wash and clean salmon with water and lemon juice, scale but leave the skin on. Pat dry with clean paper towel, drizzle 1 tbsp oil of choose, season on both sides with all the seasoning . Heat 3 tbsp oil on medium high heat, sear salmon on each sides for 4 minutes, Remove and set aside, In the same pan add garlic, ginger and bell peppers, cook for 2 minutes, add butter, pineapple chunks, stir to combine, add brown sugar, honey , soy sauce, cooking wine, red pepper flakes, water, and lemon juice, stir well , cover and bring to a low boil, add cornstarch slurry and stir to combine, bring to another low boil. Pour over salmon and serve.
