  • 2 cups uncooked rice (white)
  • 1 1/2 cup fresh pumpkin (diced)
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 3 tablespoons onion (diced)
  • 1 1/2 cup water, or chicken broth, or vegetable broth
  • 1 ounce scotch bonnet (1 whole)
  • 3 sticks fresh thyme
  • 1/2 teaspoon salt, garlic powder, onion powder, sazon seasoning mix
  • 1 teaspoon whole allspice berries (about 5 berries)
  • 2 sticks green onion
Instructions
  1. Heat oil on medium high heat, add garlic, and onion, sauteed for about 2 minutes, then add diced pumpkin, carrots and whole all spice berries, mix to combine well, sauté while stirring for about 3 minutes, add 1/3 cup of water, cover and cook for about 8 minutes. Using the back of a large spoon mash pumpkin, add coconut milk and stir to combine well, add wash rice, and all the dry seasoning, mix to combine well, add remaining 1 cup water, fresh thyme, green onion and hot pepper, cover and cook until rice is cooked about 25 minutes.
