INGREDIENTS
  • 2 cups uncooked rice (i use basmati)
  • 1 cup coconut milk
  • 2 cups uncooked spinach (fresh or frozen is fine)
  • 1 cup diced carrots
  • 1 1/2 cup water
  • 1 teaspoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt, sonion powder, garlic powder, Lawry's seasoning salt (can modify salt if need to)
  • 1 tablespoon green seasoning
  • 1 scotc bonnet pepper (whole)
  • 1 tablespoon minced garlic
  • 1/2 cup assorted bell peppers (finely diced)
Instructions
  1. DIRECTIONS
    Heat olive oil, add garlic and sauté for 1 to 2 minutes, add carrots and stir to combine, add salt, onion powder, garlic powder and green onion and spinach stir for about 1 minute to combine, add coconut milk, then add washed rice, stir for 1 minute, then add water and butter, stir to mix all the ingredients cover and cook for 25 minutes.
