- 2 cups uncooked rice (i use basmati)
- 1 cup coconut milk
- 2 cups uncooked spinach (fresh or frozen is fine)
- 1 cup diced carrots
- 1 1/2 cup water
- 1 teaspoon olive oil
- 1 tablespoon butter
- 1 teaspoon salt, sonion powder, garlic powder, Lawry's seasoning salt (can modify salt if need to)
- 1 tablespoon green seasoning
- 1 scotc bonnet pepper (whole)
- 1 tablespoon minced garlic
- 1/2 cup assorted bell peppers (finely diced)
