INGREDIENTS
  • 2 • cups uncooked rice (wash)
  • • ½ lb. small shrimp (peeled, deveined and wash)
  • 2 cups • low sodium chicken or seafood broth
  • 2 tbsp • butter
  • 1 tsp • avocado or olive oil
  • 1 green • onion
  • • ½ small onion (diced)
  • • Pinch of fresh ginger
  • 2 sprigs • fresh thyme
  • 4 cloves • garlic (minced)
  • 1 • cup grape tomatoes (dice in ½)
  • 1 tsp • salt, turmeric powder, creole seasoning, garlic powder, onion powder, lemon pepper seasoning, black pepper, chicken seasoning
Instructions
  1. In a stock pot, heat oil and butter, add onions, garlic and sauté for 2 minutes, add tomatoes and cook for another 2 minutes , add ginger and stir well to combine. Add all the dry seasoning , except for the lemon pepper seasoning and mix well to combine, add the rice , stir well to combine, and continuing stirring for 2 minutes, Add 1 ½ cups of broth , green onion and thyme and stir well to combine, cover and cook for 10 minutes, in the meantime add the lemon pepper seasoning , the white pepper and the white pepper to shrimp and mix well to combine. After 10 minutes, add the shrimp and remaining ½ cup of broth stir to combine, cover and cook for 15 minutes.
