SKILLET SAUSAGE AND POTATO

There is nothing like a one-pan meal, what makes it even better is that it is a 30-minute meal recipe as well, but it is under 30 minutes, and another great thing that makes it even better is budget-friendly. Let’s face it the price of food just like everything else is astronomical these days. And right now, the kids are either on summer break or getting ready to be and although my children are all out of the house, I do recall summer breaks vividly. You cannot keep food in the fridge or the pantry, so this is a great meal to add to your summer meal plan moms.  This is a small batch, but the recipe could be doubled if needed, another great thing, I forgot to mention, this is great for breakfast, lunch, and dinner and even better, you can make a large batch and freeze it for up to 2 weeks.

INGREDIENTS
  • 1 • 1 lb potatoes (washed and cut in desired sizes)
  • • ½ of a polka kebsa sausage (cut in desired sizes)
  • 1 cup • diced bell peppers (assorted colors)
  • 1 • onion (diced)
  • 3 • garlic (minced)
  • 1 • red chili pepper (thinly sliced)
  • 2 tablespoons • butter (unsalted)
  • 3 tablespoons • avocado oil (or oil of choice)
  • • ¼ tsp salt, white pepper, onion powder, garlic powder
  • 1/3 cup • grated cheese (I use smoked gouda)
Instructions
  1. Heat 2 tbsp olive oil on medium heat, add potatoes and cook for 10-15 minutes, stirring constantly to prevent burning or sticking. (I find if you cover the pan, it also helps with cooking). About a minute before potatoes are done, add salt, white pepper, onion powder and garlic powder and stir to combine well. When done set aside and add 1 tbsp oil in pan, brown sausage about 2 minutes on each side, when sausage is finished, leave in skillet and add onions and garlic and cook for about 1 minute, add bell peppers and chili pepper, and stir to combine well, cook for 2 minutes, constantly stirring, add cooked potatoes and stir to combine well, Add butter and stir then turn off the heat.
