INGREDIENTS
  • 2 lbs. • boneless skinless chicken thighs
  • 1 ½ • tsp salt, black pepper, smoked or sweet paprika, onion powder, garlic powder, lemon pepper seasoning,
  • 1 tsp • cayenne pepper
  • 2 tsp. • Red pepper flakes
  • 2 yellow • tbsp mustard
  • 1 cup • all-purpose flour
  • 2 tbsp • cornstarch
  • 1 tbsp • baking powder
  • 1/3 cup • honey
  • 1 cup • avocado oil (or oil of choice)
  • 1/3 cup • lemon juice
  • 1 tbsp • dried parsley (fresh is good)
  • 4 cloves • 4-6 garlic (minced)
  • 1 stick • butter
Instructions
  1. Wash the chicken in water and vinegar and trim excess fat. Season with 1 tsp salt, black pepper, onion powder, garlic powder, paprika, and lemon pepper seasoning. Also, add mustard and season well. Cover and marinate for at least 1 hour. Add flour, cornstarch, and baking powder to a bowl, mix well to combine, then add the remaining salt, black pepper, onion powder, garlic powder, and paprika. Mix well and combine. Heat oil lightly bread each piece of chicken well on both sides, and fry for about 6 to 7 minutes on each side flipping halfway through. Set Aside. In a separate skillet melt butter on low heat, add minced garlic, and sauté for 1 minute. Add parsley, red pepper flakes, lemon juice, and honey, and stir continuously for 6 minutes.
