Another quick and delicious shrimp recipe, a great addition to your weekly meal plan rotation.
Ingredients
1bunch • fresh green spinach
2uncooked • lbs shrimp (peeled and deveined)
1medium • onion (sliced)
2small • tomatoes (diced)
3cloves • of garlic (minced)
• ½ green, red, or yellow bell pepper (thinly sliced)
1tsp • salt, black pepper, cayenne pepper, paprika, creole seasoning and old bay seasoning
2tsp • extra virgin olive oil
• ¼ stick of butter (unsalted)
• Juice of ½ lemon

In a bowl combine all the dry seasonings and mix well. Wash and clean shrimp, pat dry with clean kitchen towel or paper towel. Season shrimp, with ½ of the combined dry seasoning, save other ½ for later. Heat olive oil on medium heat, brown shrimp, about 1 minute on each side, (will need to do this in at least 2 batches), set aside. In same pan, add butter, when butter melts sauté onions and garlic for about 2 minutes, the Add the shrimp back in and stir to combine well. Turn heat off. add lemon juice ( optional)n add bell peppers, and tomatoes, sauté till all are soft, about another 3 minutes, add wash spinach, cover and let cook till spinach welts down, about 7 minutes, add remaining dry seasonings and stir to combine real well.
