Description

A quick savory delicious tilapia recipe 

Ingredients
  • 1 • lb
  • • ½ of white onion (sliced)
  • • ½ of red onion (sliced)
  • 2 (Juliann)
  • 2 • onions (cut in 3’s)
  • 1 (juice half and sliced the other ½ for decoration)
  • 3 • tomatoes (diced)
  • 2 teaspoons • minced garlic
  • • ½ of two assorted bell peppers (sliced)
  • 2 • fresh thyme
  • • ½ cup water, or chicken broth (low sodium)
  • 1 teaspoon • salt
  • 3 teaspoons • black pepper (divided 2n1)
  • 2 teaspoons • sazon seasoning
  • 2 teaspoons • garlic powder (divided 2 n1)
  • 2 teaspoons • onion powder (divided 2n1)
  • 2 teaspoons • ground scotch bonnet pepper (can use cayenne pepper)
  • 2 teaspoons • old bay seasoning
  • 2 tablespoons • butter
  • 2 tablespoons • olive oil
Instructions
  1. In a bowl combine all the dry seasonings and mix well to combine. Wash and clean fish with water and lemon juice. Seasoned with dry seasonings leaving 1 tsp for later. Cover and set aside. Heat olive oil and sauté onion for 2 minutes add garlic and stir to combine sauté for 2 minutes, add tomatoes and bell pepper and thyme, stir, and combine, and cook for another 2 minutes. then add Juliann carrots, stir, and combine, cover for about 5 minutes, then add the butter and the remaining seasonings. Stir to combine well. Layer the seasoned Tilapia on top of the cooked vegetables and add the green onions. Pour the water in, cover, and cook for 15 minutes. Drizzle lemon juice over cooked fish.
