INGREDIENTS
  • 2 lbs. • cubed pork meat
  • 1 tsp • salt,
  • 1 black • pepper,
  • 1 powder, • onion
  • 1 powder, • garlic
  • 1 paprika • smoked
  • 1 tsp • cayenne or any other pepper (I used ground scotch bonnet pepper)
  • 1 tbsp • ground sage
  • 1 tbsp. • dry thyme
  • 1 tsp • lemon pepper seasoning
  • 1 tsp • ground all spice
  • 1 tsp • ground cloves
  • 2 • pinches fresh ginger (grated and divided)
  • 3 gloves • fresh garlic (minced)
  • 1 small • onion (sliced)
  • • ½ red and green bell pepper (sliced)
  • 1 of • Juice lime
  • 1 tbsp. • avocado or coconut oil
  • 1 tbsp • dark soy sauce
  • 1/3 cup • canned diced tomatoes (fresh tomatoes also good)
  • 1 ¼ • of water (preferably hot water)
  • 2 tbsp • brown sugar
Instructions
  1. Wash pork meat in water and lime juice, drain and season with all the dry seasonings, 1 pinch of fresh ginger, and soy sauce, Rub all the ingredients well into meat, cover and marinade for at least 1 hour. Heat oil on medium high heat, brown on all sides about 2 minutes on each sides. Put all the brown pieces of meat back into the pot with remaining pinch of ginger, garlic and brown sugar, stir well to combine, cover and look slowly, stirring occasionally, letting the meat cook in its own juices. Cook this way for 15 minutes, then add 1 cup of water, cover and cook 60 minutes. Add sliced onions, bell peppers and tomatoes, stir to combine well, add remaining water, cover and cook for 30 minutes.
