INGREDIENTS
  • 1 pound large shrimp (21.25 count)
  • 3/4 cups diced pineapple
  • 1 small onion (diced)
  • 3 cloves garlic (minced or sliced)
  • 1 pint fresh ginger (grated)
  • 1/4 cup pineapple juice
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt, black pepper, onion powder, garlic powder, smoked paprika, old bay seasoning
  • 1 tablespoon butter
  • 1 tablespoon fresh lemon juice
Instructions
  1. Wash and clean shrimp, making sure they are all deviated. Seasoned with all the dry seasoning. Heat olive oil on med high heat and brown shrimp, about 2-3 minutes on each side , do this in two batches . When done set them aside and in the same pot add butter and when the butter melts brown pineapple pieces till you have a nice golden char on each, when you got desired char on pineapple chunks, add onion, garlic and ginger, sauté for about 2-3 minutes, stirring constantly, then add chili pineapple sauce, stir well to combine well. Then add shrimp, and cook for another 6 minutes, stirring constantly.
