- 3 pounds cut up pork meat (I cut from a small pork shoulder)
- 1 teaspoon ground sage, dried oregano, dried thyme,black pepper onion powder, garlic powder, sweet or smoked paprika,
- 1/2 teaspoon salt
- 1/3 cup brown sugar , ketchup
- 2 tablespoons soy sauce (low sodium)
- 1 milliliter gresh ginger (2 thin slices)
- 1 tablespoon green seasoning
- 1 scotch bonnet pepper
- 3 cups hot water (divide 2n1)
- 4 bay leaves
- 4 star anise
- 3 cloves garlic (sliced)
- 1 lime (juiced)
- 2 tablespoons dark soy sauce
- 1 1/2 cup assorted colour bell peppers (largely diced)
- 1 large onion (largely diced)
- 2 tablespoons vegetable or canola oil (oil of choice is fine.)
