INGREDIENTS
  • 3 pounds cut up pork meat (I cut from a small pork shoulder)
  • 1 teaspoon ground sage, dried oregano, dried thyme,black pepper onion powder, garlic powder, sweet or smoked paprika,
  • 1/2 teaspoon salt
  • 1/3 cup brown sugar , ketchup
  • 2 tablespoons soy sauce (low sodium)
  • 1 milliliter gresh ginger (2 thin slices)
  • 1 tablespoon green seasoning
  • 1 scotch bonnet pepper
  • 3 cups hot water (divide 2n1)
  • 4 bay leaves
  • 4 star anise
  • 3 cloves garlic (sliced)
  • 1 lime (juiced)
  • 2 tablespoons dark soy sauce
  • 1 1/2 cup assorted colour bell peppers (largely diced)
  • 1 large onion (largely diced)
  • 2 tablespoons vegetable or canola oil (oil of choice is fine.)
Instructions
  1. Wash meat and trim excess fat. Pat dry, season with all the dry seasonings, low sodium soy sauce, lime juice, diced bell peppers and onions, green seasoning and sliced garlic. Cover and marinade overnight or for at least 1 hour. Heat oil on medium heat, add bay leaves, ginger, star anise and whole all spicy berries, cook them for 1 minute, stirring constantly. Add the meat and the scotch bonnet pepper, shaking off the bell peppers and onions. Cook uncovered for 30 minutes on medium high heat, stirring constantly. Add sugar and dark soy sauce, stir well to combine. Add 2 cups hot water, stir cover, and cook for 1 hour, stirring occasionally. Add ketchup and stir to combine, pour 1 cup hot water in the bowl meat was seasoned in and pour onto meat, cover and cook 1 hour .
