- 4 pounds oxtail meat
- 1 lemon (need the juice to clean oxtail)
- 2 tablespoons spicy green seasoning
- 1 tablespoon lawrys seasoning salt, smoked or sweet paprika, onion powder, garlic powder black pepper, sazon seasoning salt
- 1/2 teaspoon ground all spice (or allspice berries)
- 3 bay leaves
- 1/4 teaspoon ground cinnamon, nutmeg and ground ginger (fresh grated ginger is fine also)
- 1 tablespoon Jamaican browning sauce (can use low sodium oyster sauce, kitchen boiquet)
- 1 can diced tomatoes (15 oz can)
- 1 lar onion (sliced)
- 1/2 tri color bell peppers (sliced)
- 1 can butter beans
- 4 cloves garlic (minced)
- 1 cup fresh diced pumpkin
- 1 cup red wine
- 1 teaspoon cooking oil (I use coconut)
- 1 tablespoon brown sugar
- 1 tablespoon tomato paste
- 4 sticks fresh thyme
- 1 cup diced carrots (cut into desired sizes)
- 3 cups water (preferably hot)
- 1 cup beef broth (low sodium)
