  1. Wash roast with water and lemon, rinse and pat dry with clean paper towel. Drizzle olive oil on both sides seasoned well on both sides with dry seasonings, not including the dry parsley. Set aside while you prepare vegetables and preheat oven to 375. Heat iron skillet and add ghee when it melts add chuck roast and butter, brown on each side about 4 minutes on each side. Remove and add onions and garlic, sauté 3 minutes, then add bell peppers, fresh diced tomatoes, dry parsley and cook for 5 minutes stirring constantly, add flour and stir for 1 minute, add canned tomatoes and tomatoes paste, stir and combine, cook for 1 minute, then add soy sauce and beef broth, stir well to combine. Add chuck roast in cover and cook in oven for 2 hours, Remove, add potatoes and carrots and cook for another 30 minutes.
