  1. Heat a small skillet on medium high heat, add the 12 all spice berries and toast them for about 6 minutes. Meanwhile Wash meat with water and pat dry. Using a sharp knife poke as many holes as possible on all sides of the pork shoulder. In a small bowl, combine all the seasonings , with jerk marinade, olive oil and Guiness. Mix well to combine. Season all sides of the meat generously and in the holes you poked put 1 to 2 whole cloves inside them. Cover and marinade overnight or at least 6 hours.
