These Homemade French Fry Nachos are a delicious fusion of crispy fries and savory nacho toppings.   1. Peel potatoes and cut into desired sizes, wash cut potatoes and dry. I left it to dry on a baking rack. While potatoes are drying, wash chicken breast, Pat dry with clean paper towel Using a meat cleaver or a large knife cut chicken breast in small pieces, then chop them till they look almost as if you put them in a food processor, (or you can do that if you choose to). Set it aside. Heat 3 cups of oil on medium heat and fry the French fries, about 6 minutes for each batch. lay on baking rack and sprinkle little salt on each batch. In the meantime, heat olive oil on medium low heat, add chicken, stir continuously for 55 minutes, add the dry seasonings and stir well to combine, add minced garlic and ½ of the diced onions, stir well to combine, cook for 20 minutes, stirring constantly.

  1. Layer French fries at the bottom, add chicken, add remaining diced onions, as well as diced tomatoes, add sauce.
