JAMAICAN STYLE STEAM KALE AND CABBAGE

If you know anything about Jamaicans, you know we love us steamed cabbage. Usually, add some carrots, or if you are like me you add some corn as well.
Well, I decided to take up a notch, as I am looking to eat less meat and while the steamed cabbage is great for that and will now be more frequent, I have decided to kick things up a notch. See I also have this great steam kale recipe and so I thought what if I also combined the two, it would seem like more variety. Just last week I made my steamed kale and my husband tasted it and asked jokingly if the whole pot was his, said he did not need anything else. And did not think I could top it or match it until I made this, just last night. This is such a great recipe if you are looking for more vegetarian ideas or vegetarian recipes, you could serve this white, or brown rice, quinoa, or even baked potatoes.

Heat oil and butter on medium heat, when butter melts, add onions and garlic, sauté for about 3 minutes, then add bell peppers, thyme, green onions, and tomatoes, sauté another 2 or 3 minutes, stirring constantly. Then add the washed and drain kale, add 2 tbsp. water, or vegetable broth) cover until kale wilts, to about half the size, (about 6 minutes)stir to combine , cook another 3 minutes, add the seasonings, the cabbage, and remaining 2 tbsp. liquid. Cover about 4 minutes giving cabbage some time to wilt so you can stir and combine everything well. Cover and cook another 2minutes.

Note: I do not like my cabbage to be too soft, I still like some crunch, if you want to you can always cook longer it will not hurt it all.
