Heat 1 tsp oil and ¼ stick of butter on medium high heat. sauté pineapple slices till you have a golden-brown color on each side, about 2 to 3 minutes on each side. Set aside on a plate. Then pour remaining oil and butter mixture from sauteing pineapples in a sauce pan, turn on medium low heat, add grated ginger, and jerk marinade, stir and sauté about 1 minute, add brown sugar, pineapple juice, water, pineapple chunks, soy sauce and cover and bring to a boil. When boil, mix water and corn starch together, add in the pot, stirring constantly. Add a pinch of salt and black pepper.
