Ingredients

• 1 boneless skinless chicken breast ( cur into bite size or desired sizes)

Instructions

  1. Wash and clean chicken in water and lemon juice, pat dry. Add 1 tsp olive oil and all the dry seasonings as well as 1 tsp jerk marinade. Seasoned chicken well, and set aside to marinate at lease 15 minutes. In a skillet heat 1 tsp olive oil and scrambled your eggs, remove eggs and add remaining 2 tsp olive oil, brown chicken, 3 minutes on each side, remove chicken and sauté onions and garlic about 3 minutes, add mixed vegetables and remaining tsp jerk marinade, stir well to combine, cook for 3 minutes, add soy sauce, hoisin sauce, and oyster sauce stir well to combine, add cooked rice and stir well to combine, add the brown chicken pieces and eggs and stir well to combine. Taste if needs additional salt to taste.
